Sausage Stuffed Keto Acorn Squash
Sausage Stuffed Keto Acorn Squash Ingredients
- Acorn squash - halved 
- 2 tbsp olive oil - divided 
- 1/2 yellow onion - diced 
- 1 garlic clove - minced 
- 1 lb Italian sausage meat 
- 2 tbsp parsley leaves - finely diced 
- 1/4 cup raisins 
Directions
- Preheat oven to 375F 
- Cut acorn squash in half, scoop out seeds, brush inside of each squash with 1/2 tbsp olive 
- Place acorn squash in oven for 40 minutes 
- In a large skillet heat 1 tbsp of olive oil on medium heat, add onion and minced garlic, sauté for 5 minutes 
- Push onion/garlic mixture to one side of skillet and then cook sausage in same skillet for approximately 10 minutes 
- Add fresh parsley into onion/garlic/sausage mixture and stir, then remove from heat 
- Mix in raisins 
- When acorn squash is fully roasted, top with mixture 
- Enjoy!
