Easy Crockpot Chicken Curry
Easy Crockpot Chicken Curry Ingredients - 4 Servings
- 4 chicken thighs bone in - remove skin 
- 2 jalapeños - diced 
- 1 red onion - diced 
- 1 whole garlic bulb - minced 
- 2 cans coconut milk 
- 2 tablespoons curry 
- 2 tablespoons basil 
- 1 tablespoon chili powder 
- 1 tablespoon ginger 
- 1 tablespoon Stevia brown sugar 
- 1 tablespoon olive oil 
- Salt + pepper to taste 
- 1 bag Banza rice 
Directions
- Add olive oil to skillet on medium heat, then cook chicken 2 minutes per side 
- Cook rice per package directions 
- Add all ingredients, minus the chicken, to crockpot and stir well 
- Add chicken, then cover and cook on high for 3 hours 
- Removed chicken and peel the chicken off the of bone 
- Place the chicken back inside your crockpot and mix well 
- Serve over Banza rice for a low carb, high protein meal 
- Enjoy!
