Butternut Squash Soup
Butternut Squash Soup Ingredients
- 16 oz Vegestable broth 
- 1 tsp nutmeg 
- 1 tsp cinnamon 
- 1/4 cup sugar free maple syrup 
- 1 butternut squash 
- 1 yellow onion 
- 4 cloves garlic 
- 1 tsp pepper 
- 1 tsp garlic salt 
- 2 tbsp olive oil 
Directions
- Preheat oven to 400F 
- Cut up butternut squash & onion 
- Lay on sheet pan with whole garlic cloves 
- Sprinkle pepper and garlic salt 
- Apply olive oil and mix with hands 
- Roast for 15 minutes - remove the garlic - cook butternut squash and onion for another 15 minutes 
- Add cooked garlic butternut squash and onion to blender 
- Add broth, nutmeg, cinnamon, syrup and blend for 2 minutes 
- Enjoy!
